Brunch - for four generations and one puppy from the depths of the fridge and freezer
Coffee, realize you need more coffee mugs because 1 isn't going to cut it for guests
Zucchini Pecan Bread
mix flour, sugar, baking soda, baking powder and salt
mix eggs, vanilla, vegetable oil in mixer and add dry ingredients
stir in shredded zucchini and ground pecans
bake for 40 minutes or until bread pulls away from sides of loaf pan
let cool on wire rack and slice
serve with butter (remember to take out butter and serve at room temp)
(Clean up after Puppy and analyze how one can poop on stairs)
(Make Bloody Buddies if you haven't yet)
Quiche
cook bacon
microwave spinach (even the western family brick from the far reaches of the freezer)
slice tomatoes
(question yourself about potatoes - hashbrowns, latkes, scalloped)
bake crust (don't forget to poke holes in it with a fork or blind bake)
mix 1 cup cream, 3 eggs and 1 and 1/2 cups veggies (bacon is a vegetable)
sprinkle cheese (smoked black pepper white cheddar tilamook) on warm crust
pour egg mixture in to crust and bake 40 minutes and let cool for 10
(Decide against potatoes)
(What! No Champagne- tragedy)
Stuffed Mushrooms
Baby girl asks if she can help. So, she wipes the mushrooms and takes the stems out and places them in a bowl. (love)
Chop stems, onion and garlic and saute in olive oil for 8 minutes (or while you are loading the furniture in the truck)put in bowl.
Add crab meat, breadcrumbs, parmesan, parsley, egg and salt and pepper and mix to combine.
Put mushrooms on a baking sheet covered in aluminum foil (recycle it if you must, but it's that or watch aunt clean the pan all afternoon)
Fill mushrooms with crab filling and sprinkle with parmesan cheese and drizzle with olive oil.
Dot with a lot of butter (if you don't have a holiday because you're aunt came in two months early then you're only excuse is that the mushrooms look and taste SO much better with butter)
Bake at 350 for 20 minutes.
(Apologize for not being able to find salt and pepper shakers again...explain the validity for the box of kosher salt on table)
Strawberries
Hull and Slice Strawberries - the big batch from Costco.
Place in bowl and let sit at room temperature while you finish the cooking and run around trying to find clean plates and unspotted "silver"ware.
Put Sour Cream in a small dish
Put Brown Sugar in a small dish (would be nice if they matched)
Explain to your mother that indeed it is not strawberry season, but you have them anyway.
Pass the condiments with bowls of strawberries (mom's great idea)
(Clean up after puppy)
(Find salt and pepper shakers)
